Let's face it...we all like comfort food, but when you can't consume dairy it can be a bummer especially when it comes to cheese. Here's a quick and easy recipe that you can enjoy at home cozying up to your favourite show. Maybe this will be your kids new favourite Mac and cheese recipe. Either way, it's made for everyone in mind using simple delicious ingredients using Magic Oats Unsweetened Original Oat Milk Powder for that creamy cheesy finish.
Vegan Mac & Cheeze Recipe
1/3 C Magic Oats Unsweetened Original Oat Milk (1/3 C water: 2 tbsp oat milk powder)
1 1/2 C Macaroni Noodles
3/4 Can White Navy Beans
1/2 C Nutritional yeast
1/3 C Red Pepper
3 tbsp Extra Virgin Olive Oil
3/4 tsp Sea Salt
1/4 tsp Pepper
Dried Parsley Flakes
Servings: 2 Servings
Boil 6 Cups of water in a medium sized pot and season with salt.
Whisk 1/3 C of water with 2 tbsp of oat milk powder in a cup. TIP: Use a shaker bottle or mason jar.
Next, add your macaroni noodles to the boiled water and cook for 8 -- 10 minutes.
While the noodles are cooking, add the oat milk into a blender plus all the remaining ingredients. Blend until creamy and smooth.
On a medium low heat, add vegan cheese mixture in a seperate smaller pot and simmer for 5 minutes.
Once the noodles are cooked, strain the noodles and add them back into your pot. Next, add the cooked cheeze sauce into the noodles and stir until combined. Garnish with parsley and enjoy!
