Dairy Free Creamy White Bean & Mushroom Soup You Must Try!

This super easy to make recipe is hearty, satisfying and perfect to warm you up this Fall. 🍲

We used the Unsweetened Coconut Oat Milk Powder to add that extra layer of creaminess. Let's make it!



Creamy White Bean & Mushroom Soup

Ingredients:


✨ 2 C Cremini Mushrooms (Sliced)

✨ 1 Medium Red Onion (Diced)

✨ 2 Garlic Gloves (Minced)

✨ 1 Can White Navy Beans

✨ 900 ml Vegetable Stock

✨ 1/3 C Unsweetened Coconut Oat Milk (1/3 C water: 3 tbsp powder)

✨ 1 tsp Dried Thyme

✨ 3 tbsp Olive Oil

✨ 1/2 tsp salt

✨ 1/2 tsp pepper


Servings: 8 Cups


Instructions:

  1. In a large pot sauté onions, garlic, mushroom, 1/2 tsp thyme, salt and pepper for 3 - 4 minutes.

  2. Next, whisk 1/3 C water with 3 tbsp Unsweetened Coconut Oat Milk Powder and add the oat milk into the pot.

  3. Cook down for 1 - 2 minutes and then add in the white navy beans.

  4. Next, add in the entire container of vegetable stock to the pot and the remaining thyme. Stir and cook for 1 hour on low heat.

  5. Pour yourself a large bowl and enjoy!

This recipe is loaded with earthy and delicious cremini mushrooms. Switch it up with hearty portobello, button and or oyster mushrooms for a variety of extra mushroom goodness. Mushrooms are rich in fibre, protein and antioxidants.
