Ingredients
1 tbsp olive oil
1 small onion, diced
2 carrots, chopped
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp turmeric
1 cup pumpkin purée
3 cups vegetable broth
½ cup prepared Magic Oats Extra Creamy Oat Milk
Salt and pepper, to taste
Instructions
Sauté the vegetables. Heat the olive oil in a large pot over medium heat. Add the diced onion and carrots and cook for 5–7 minutes, or until they begin to soften.
Add the aromatics. Stir in the garlic, fresh ginger, and turmeric. Cook for another 1–2 minutes, stirring frequently, until fragrant.
Add the pumpkin. Stir in the pumpkin purée until everything is well combined.
Simmer. Pour in the vegetable broth and bring the soup to a gentle boil. Reduce the heat and simmer for about 15–20 minutes, or until the carrots are completely tender.
Blend until smooth. Using an immersion blender, carefully blend the soup directly in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth.
Make it extra creamy. Stir in ½ cup of prepared Magic Oats Extra Creamy Oat Milk and gently heat for another 2–3 minutes. Season with salt and pepper to taste.
