Dairy Free Double Chocolate Chip Pancakes with Blackberry Compote and Coconut Whip

Chocolate and Berry inspired recipe bursting with blackberry compote, a touch of brown sugar, chocolate chips and chocolate oat milk powder goodness you will FALL IN LOVE with this recipe.


Ingredients:

-1 C Pancake Mix

- 1/2 tsp Vanilla Extract

- 1 1/2 tbsp Cocoa Powder

- 1 Egg

- 3/4 C Water

- 3 tbsp Magic Oats Chocolate Oat Milk Powder

- 3-4 tbsp Coconut or Vegetable Oil

- 3 tbsp Dairy Free Chocolate Chips

- Coconut Whip

- Drizzle Maple Syrup


Compote Ingredients:

- 1 C Frozen Blackberries

- 1 tbsp Arrowroot Starch (or Tapioca)

- 1 tsp Lemon Juice

- Dash of Salt


Servings: 5 - 6 Pancakes


Instructions:

  1. In a sauce pan, add in all the compote ingredients and simmer on medium low for 10 minutes, stirring occasionally. Once cooked take off the heat and cover.

  2. While the berry compote cooks, add all the dry ingredients into a large bowl and mix until all dry ingredients are combined. Next add in the wet ingredients and mix again until well combined.

  3. In a large frying pan, add 2 tbsp of oil and turn on to a medium head. Measure a heaping 1/3 cup of pancake batter and add into pan. Cook on each side for 1 - 2 minutes or until golden brown.

  4. Stack pancakes onto a plate and load on the blackberry compote on top with coconut whipped cream. P.S. Don't forget the maple syrup. ENJOY!


To make this recipe 100% vegan, substitute the egg for a flax egg. Ratio 3 tbsp water to 1 tbsp ground flax seed. Another delicious alternative is you can choose any berry to whip up a into a compote. Simply substitute the frozen blackberries for strawberries, blueberries or mixed berries.
